Allergen information
Here at Little Tums a large part of our business is preparing dietary, allergen and cultural meals.
It’s important to us that we ensure these meals are prepared with as much attention to detail as our main meals.
Some days up to 30% of the meals we prepare are ‘special requirement’ meals and we take pride in ensuring that these meals are prepared as closely to the main menu as possible making the necessary changes to fit with the child’s specific request.
We are able to prepare meals based on dietary needs, allergen and cultural beliefs.
All our dietary meals are packed individually, and are clearly labelled with the child’s specific allergen, dietary or cultural requirement, to ensure that these are easy to handle and distribute at your settings.
Please see our guide to handling and preparing allergen and dietary meals:
- Staff complete and pass the Food Standard Agency’s Food Allergy & Intolerance training course
- separate preparation tables are used
- separate chopping boards and utensils are used
- all tables and equipment is cleaned before use / clean separate cloths are used
- ingredients and prepared foods are stored separately in closed and labelled containers
- hands are washed thoroughly before and between preparing dishes
- clean aprons are worn when preparing dishes with and without certain allergens / NIC ingredients
- ingredients that contain allergens / NIC ingredients are kept separate from other ingredients
- staff are aware that there are many ‘hidden ingredients’ found in packets, bottles, jars and tins of bought in foods. Worcester sauce for example contains anchovies (fish allergen) and some vinegars contain malt / barley (gluten allergen). All cupboard food ingredients used at Little Tums are therefore carefully checked and a detailed Bought in Ingredient Portfolio is available for easy reference
- ingredients are carefully checked when received into the kitchen to ensure they are as ordered and comply with the Bought in Ingredient Portfolio
- great care is taken to update all allergen and ingredient information when suppliers / products and menus change
- meals/ dishes are packed separately and individually.
